It will default to the locale of your iPad. I can't remember exactly which setting this is, within iOS, but obviously it either hasn't been changed or perhaps a reboot of the device is required. There may be more than one setting at play.

Is there a way to have default always to english? For me it defaults to german (although my IPad is set to english!)

The option is presented when you first start SkyDemon. You can terminate SkyDemon like you terminate other apps (double-tap the home button then swipe upwards) and restart it if you'd like to make it use another language.
