Sky Demon knows aircraft height AMSL from its GPS input, as well as the height AMSL of the terrain being flown over, from its chart data. Would it be possible to have an optional instrument to display aircraft height AGL, by deducting one from the other?

Yes, just tap the altitude instrument and it will change to height.
