Do you mean when in-flight, or when displaying the log afterwards? In flight, touch the SD logo top-left, then 'Setup' and toggle 'Show Breadcrumbs' off. When displaying a flight log track, touch the red 'X' box bottom left of the virtual radar display. I don't know how to modify it in either case.

Tap the Map Layers icon bottom right of the screen then Terrain & Surface Features > Roads and select All.
