I'm considering buying SkyDemon but since I live in Spain I would like to know if the flightplan filing works also for FPL of flights taking place entirely outside UK airspace.

It should 'just work'. SkyDemon use EuroFPL for the flight plan filing - there's nothing UK specific about it.
