When I am flying using SkyDemon on ipad mini 5 Cellular connected to a Sky Echo 2, without a planed route there is a displayed compass. Is the displayed compass a calculated compass bearing or is it taken from the internals of the iPad so a measurement?
Also is the answer the same on a Goofle Pixel 6?

It will use your current track as derived from whichever GNSS source is being used by SkyDemon.
