Hi there,
why is it not possible to hide certain NOTAMs while others can be hidden/unhidden manually?

It isn't that simple. If you show us the NOTAM you think should be able to be hidden, we can tell you why hiding it is not currently allowed. Basically it will depend upon how the originator of the NOTAM has encoded it in the system.
