How do I get heading up instead of North up on my iPad

You can't get heading up, as SD does not know which way your aircraft is pointing :-)
But if you tap and hold the orange arrow in the top right corner, you can choose between North up, Track up (your actual track over ground including the influence of wind) og Course up (your planned track)
